Veggie Cajun

Really good-even the meat eaters loved it.  The "Gimme Lean" menioned is great.  I find it at Whole Foods here, Publix in FL had it also.

 

Vegetarian Quinoa Jambalaya
1 ½ cups cooked beans (I used kidney beans but any kind would be fine)*
1 cup faux sausage crumbles**
2 tablespoons extra virgin olive oil
¼ cup onion, chopped
¼ cup bell pepper, chopped
¼ cup celery, chopped
2 garlic cloves, minced
½ cup tomatoes, diced
2 bay leaves
1 tablespoon Bragg’s Liquid Aminos
1-2 teaspoons Tabasco
¾ cup quinoa
1 ½ cups vegetables broth
1 ½ cups water
1 teaspoon sea salt
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon oregano flakes
½ teaspoon cayenne pepper
¼ teaspoon black pepper
In a large skillet sauté the vegetables in the oil for a few minutes then stir in the dry quinoa.  After the quinoa has been coated by the oil and vegetables stir in the remaining ingredients and cover the skillet.  Let steam 20-30 minutes or until the quinoa is soft, stirring occasionally.

*Freshly cooked beans are best, is you are using canned beans please drain and rinse them before adding them to this recipe.
**Faux sausage is available in most freezer sections of grocery stores by the rest of the vegetarian “fake meat,” products.  Also, I have recently discovered a faux sausage that has become my favorite, it is not frozen but instead is usually found in the refrigerated section of the produce isle.  It tastes great and the soy in it is non-genetically modified! It’s called Gimme Lean and if you choose to use this you’ll have to brown the faux sausage in a bit of oil first then remove it from the skillet and continue on with the recipe as described (stirring the browned and crumpled faux sausage in just after the quinoa).

Ain't the internet GREAT!

Found a friend from Germany today.  She and her hubby are now living in the South of France.  

Let me see - since my last post.  I have now lost 55+ pounds.  Have gone vegatarian and have been able to stop some of my meds.

We lost our wonderful alpha dog Tobi (many tears)  and have since added Abe to the pack.  He is from the Colorado Cell Dog program and is a wonderful dog.  He is part Lab and part Grayhound.  

 

It seems spring may come to the Rockies at long last this year.  Have had some beautiful days lately- but need rain badly. I'll try to post some more recipes.

Vibram five finger bogus site

For anyone who uses or is looking to get Vibram Five finger shoes (I love them). Please make sure you do not use the site with Vibramfivefingersbarefoot in their address. The real site doesn't have "barefoot." This site is totally bogus- the address is fake, the phone number doesn't work. They answer emails but you cannot get a person. They are overseas in China (didn't realize until I got shipping information). Rather than 3 pairs of shoes paid for, I got a cheap plastic beaded bracelet.

They say they are an outlet--WRONG!!!

Devil's Head off Rampart Range Rd

Yep, we headed back up to Rampart Range. This time we went to Devil's Head about 30 miles North of Woodland Park.  The review I read said it was an "easy" trail.  Not sure we agreed with that but after a few stops to catch our breath we made it.  I even made it up and down the steps in the pictures, did I mention I have a problem with steps?  My hands were cramped by the time I made it down from gripping the rail.  But the view was sooo worth it.

We decided to explore Rampart Range Road today.  The Rubicon earned its name today after we took a wrong turn.  You know its bad when the Jeep GPS shows you in a blank field.

Baby Pictures

Just catching up

Haven't checked in lately.  The camera is broken so no pics.  Things are going well.  Spring is moving into summer and the fields are covered in yellow daisies like flowers.  The antelope have had their babies an we can watch them out back.

Hubby traded the vette for a Harley, really pretty and it fits me...hmmmm.  He's my hero for getting Air Gas to do the right thing and getting us a fair price for our gas and correcting past mistakes with our account.  So now I can get back to doing more glass (hard to do much when they jump your price from $18-$48 overnight).

Saphira is growing like a weed and is now bigger than the schnauzers.
